Six plump parcels nestled in a drizzle of orange-sage butter sit before me as my mouth waters with memories of the Amalfi Coast! St Tropez’s signature Tortelloni Con Ricotta represents the flavours of Italy with every mouthful and an outlook of ocean blues and summer breezes complete the picture.
More generous than your run of the mill lunch time serve, each hand crafted crescent of fresh pasta encases a combination of soft centred egg yolk and cashew ricotta that oozes as my fork pierces the pillow. The golden and delightfully gooey yolk serves as a sauce to amplify the favours of lightly seasoned ricotta, with dried orange-sage butter an elegant compliment to both fillings, featuring that oh-so-subtle zing of citrus.
Scattered cubes of sautéed pumpkin add bursts of contrasting flavour and colour with occasional sprigs of rucola and dried pumpkin spirals providing a crisp and crunchy accompaniment to the al dente tortelloni. The result? Pasta perfection!
A slice of crusty sourdough swathed in butter washed down with a generous slosh of chilled rose and the scene is set for what’s to come, yet despite a desire to attack this edible art piece with my usual gusto, Tortelloni Con Ricotta is a dish best savoured slowly to appreciate the tenderness of fresh artisan pasta and traditional Italian flavours. If you’re going to opt for carbs, you may as well make the most of them!
A seriously satisfying dish for this lover of all things Italian but word to the wise, if you still have space for dessert, take a long hard look at the Tonka Creme Brûlée! It’s worth every calorie.
